Drive to visit some of Xi'an's best local restaurants. After taking in the sights and sounds of Xi'an, take your pick from one or two of the following local foods:

Wei Family Cold Noodles (Weijia Liangpi, 魏家凉皮): Liangpi is a classic dish composed of cold noodles and a tangy sauce that runs the gamut on flavor. The much-loved Wei family is famous for this celebrated Xi'an dish.
Roujiamo (肉夹馍): Widely regarded as China's answer to the hamburger, this delicious morsel is a must-try and one of Yuanji Fast Food restaurant's signature dishes. With the classic combination of marinated meat in a baked bun, it's hard to go wrong. Take your pick of sautéed pork belly, sautéed lean pork or sautéed beef roujiamo.
Bingfeng: Liangpi and roujiamo is best enjoyed with local drink, Bingfeng (known as 'Ice Peak' in English), to make up a classic Xi'an summer-time combo.
Tangbao (汤包): The famous tangbao, or "soup bun", is a steamed bun served with a succulent spiced sauce. Local restaurant Xiaoliu Tangbao makes some of the best tangbao in Xi'an.
Dumplings (Jiaozi, 饺子): Well-known and well-loved, this staple Chinese dish needs little in the way of introduction. Tuck into some of the best dumplings in Xi'an at the Defachang Dumpling Restaurant.
Yangrou Paomo (羊肉泡馍): This wintertime Muslim favorite dates back to ancient Xi'an and consists of pita bread soaked in lamb or beef soup.
